Sharing some of our favorite staple meals below! Great for busy nights, when you want to add a twist to leftovers, or when you just want some new recipes to try!

Chicken Fajitas

Ingredients:

  • 2 pounds of chicken breast (diced or cut into strips)

  • 1 frozen bag mix of onion and peppers

  • Fajita seasoning (we make ours)

  • Flour or corn tortillas

  • 2 cans of black beans

  • Toppings: white queso (sometimes I buy it and sometimes I make it) and sour cream

Instructions:

  1. Season the chicken with seasoning then cook in a skillet or on a griddle with onions and peppers.

  2. Heat the tortillas, black beans, and queso

  3. Assemble tortillas and add toppings

Note: We like to buy large tortillas and a bag of tortilla chips and use leftovers to make quesadillas or nachos!

Maybe I am bias, but cooking on a our outdoor griddle makes them taste so much better! Not to mention how fast and easy it is. It was definitely the best Father’s Day gift I could have gotten my husband!
