Sharing some of our favorite staple meals below! Great for busy nights, when you want to add a twist to leftovers, or when you just want some new recipes to try!
Chicken Fajitas
Ingredients:
2 pounds of chicken breast (diced or cut into strips)
1 frozen bag mix of onion and peppers
Fajita seasoning (we make ours)
Flour or corn tortillas
2 cans of black beans
Toppings: white queso (sometimes I buy it and sometimes I make it) and sour cream
Instructions:
Season the chicken with seasoning then cook in a skillet or on a griddle with onions and peppers.
Heat the tortillas, black beans, and queso
Assemble tortillas and add toppings
Maybe I am bias, but cooking on a our outdoor griddle makes them taste so much better! Not to mention how fast and easy it is. It was definitely the best Father’s Day gift I could have gotten my husband!

Mozzarella cheese (I buy the block and shred it myself)
