Egg-Free Birthday Cupcakes
My son has an egg allergy so we have to be very careful to always read the ingredients before he eats something. I wanted him to have cupcakes like everyone else so instead of making cupcakes he couldn’t eat, I replaced the egg and he LOVED them. I didn’t make the cake mix or the icing because store bought was easier. However, I did replace the eggs that the box called for with baking powder and milk and they rose just like they should and tasted just as good if not better!

It was a jello cake with whipped topping as the icing and the morning started out perfect, but by party time it warmed up enough to make the whipped topping start melting and running off very quickly. Needless to say, I wasn’t proud of it but my baby loved it so that was all that mattered!
His second birthday was my chance to redeem myself but I still didn’t have the budget for a custom cake on top of finding one that could be made allergen-free.
I found a box cake mix that had no eggs listed in the ingredient list and was not made in a facility that used eggs to avoid cross contamination. Thankfully most store bought icing he can have. I purchased one box of vanilla cake mix and one container of vanilla funfetti icing. The box called for oil, water, and 3 eggs. The substitute I used in place of the eggs was 6 tablespoons of milk mixed with 1 1/2 teaspoons of baking powder. (2 tbsp. of milk with 1/2 tsp. of baking powder per egg)
Then all I had to do was add the liners I bought before baking them and put some toppers on that matched the theme! I will be doing the same for his other family party this month. Same cake mix and icing just in cake form instead of cupcakes!
